Whether you're new to water kefir or have been brewing for years, we're here to help. Here are answers to some of the most common questions about Florida Sun Kefir Live Active Water Kefir Grains.

What exactly will I receive?

You can choose from three portion sizes:

Full Portion — 1 Portion Cup
One full portion of fresh, live active water kefir grains.

Half Cup — 2 Portion Cups
Two full portions — approximately ½ measuring cup total.

One Cup — 4 Portion Cups
Four full portions — approximately 1 measuring cup total.

Your grains are shipped live and active, not as a powdered starter.

Are these real water kefir grains?

Yes. Florida Sun Kefir grains are living water kefir cultures maintained through continuous daily growth.

They are not a powdered or single-use starter.

Are the grains ready to use when I receive them?

Yes. Your grains arrive ready for you to begin your first batch.

Because they are living cultures that have just been shipped and introduced to a new environment, they may require several brewing cycles to fully adjust to your water, sugar and temperature.

Will my kefir grains grow?

With proper care and successful brewing, water kefir grains can grow and multiply.

Growth rates vary depending on water, sugar, minerals, temperature and other brewing conditions.

Why did my grains change color?

This can be completely normal.

We sometimes describe water kefir grains as “chameleon-like” because their appearance can change according to their brewing environment.

Different sugars, molasses and minerals can affect their color. Darker ingredients can naturally produce darker-looking grains.

What type of water should I use?

We recommend spring water or suitable filtered water that retains minerals.

Avoid routinely using distilled water because it contains virtually no minerals.

If your tap water is heavily chlorinated, consider an appropriate bottled or filtered water.

What type of sugar should I use?

Several types of sugar can be used for water kefir.

Different sugars can affect the grains' appearance, fermentation activity and growth, so you may notice changes when switching sugars.

A small amount of molasses is optional but recommended as an additional mineral source.

How long should water kefir ferment?

A typical first fermentation is approximately 24–48 hours.

Fermentation time varies depending on room temperature, amount of grains, sugar, water and other conditions.

Taste after approximately 24 hours and become familiar with how your own culture behaves.

Why is my water kefir still sweet?

Some sweetness after fermentation is normal.

The amount of sweetness remaining depends on fermentation time, temperature, amount of grains, sugar concentration and activity of the culture.

Longer fermentation generally produces a less-sweet result.

Why are my grains fermenting slowly?

Slower activity does not automatically mean your grains are unhealthy.

Possible factors include:

• Cooler room temperature
• Water mineral content
• Type or amount of sugar
• Ratio of grains to water
• Recent shipping
• Changes in brewing environment

Newly received grains may need several brewing cycles to adjust.

Do I need molasses?

Molasses is optional, but recommended as an additional mineral source.

You only need a small amount. Because molasses is dark, it may also change the color of your grains.

Can I flavor my water kefir?

Absolutely.

After the first fermentation, remove the kefir grains before adding fruit, juice, ginger or other flavorings.

Can water kefir become carbonated?

Yes. A second fermentation in an appropriate sealed bottle can create natural carbonation.

Important: Carbonation can produce significant bottle pressure. Only use containers designed for carbonated beverages and always open them carefully.

Should I refrigerate my grains?

For normal active brewing, the grains are generally kept at room temperature in prepared sugar water.

For short breaks, grains can be refrigerated in sugar water in a covered container.

After refrigeration, they may need several brewing cycles to return to their previous activity.

Can I use metal utensils?

For routine handling, we recommend using a non-metal strainer and appropriate clean brewing utensils.

How do I know if something is wrong?

Normal variations in grain color, size, shape or fermentation speed aren't necessarily signs of a problem.

However, if you see visible mold, notice an unusual foul odor, or observe another obvious sign of contamination, do not consume the batch.
