Caring for Your Florida Sun Kefir Water Kefir Grains

Water kefir grains are a living fermentation culture. With proper care and regular feeding, your grains can remain active and may continue to grow and multiply over time.

Because they are living cultures, their appearance and activity can change as they adjust to different water, sugars, minerals and temperatures.

KEEP YOUR GRAINS FED

Sugar provides the food your water kefir culture needs during fermentation.

For regular brewing, place your strained grains into a fresh batch of properly prepared sugar water after completing each fermentation.

Avoid routinely leaving your grains without a food source for extended periods.

CHOOSE THE RIGHT WATER

Water kefir grains generally perform best when their brewing water contains some naturally occurring minerals.

Good choices include:

• Spring water
• Suitable filtered water that retains minerals

Avoid routinely using distilled water, because it contains virtually no minerals.

If your tap water is heavily chlorinated or otherwise unsuitable for fermentation, consider using an appropriate bottled or filtered water.

CHOOSING SUGAR

Different sugars can affect your grains differently.

The type of sugar you use may influence the grains' color, appearance, fermentation activity and growth rate.

A small amount of molasses is optional but recommended as an additional source of minerals.

You don't need to be alarmed if changing sugars causes your grains to look somewhat different.

YOUR GRAINS CAN BE “CHAMELEON-LIKE”

Florida Sun Kefir grains may naturally change in color, size, shape and appearance depending on their brewing environment.

For example, darker sugars or molasses may cause grains to become darker, while different brewing conditions may affect their size and texture.

These changes do not automatically mean something is wrong with your grains.

TEMPERATURE & LOCATION

Keep your brewing jar at a comfortable room temperature and away from direct sunlight and excessive heat.

Temperature affects fermentation speed:

Warmer temperatures → generally faster fermentation

Cooler temperatures → generally slower fermentation

Avoid placing your brewing jar where it will experience extreme temperature changes.

AFTER SHIPPING

Your grains have been moved from our brewing environment to yours.

Changes in water, sugar, minerals and temperature can temporarily affect their activity. Give newly received grains an opportunity to adjust to their new environment through several brewing cycles.

IF YOUR GRAINS SEEM SLOW

Slower fermentation doesn't necessarily mean your grains are unhealthy.

Consider:

• Room temperature
• Water quality and mineral content
• Type and amount of sugar
• Amount of grains being used
• Amount of water
• Length of fermentation
• Recent shipping or environmental changes

Make one adjustment at a time whenever possible. This makes it easier to determine what is affecting your brew.

GROWING & MULTIPLYING

With proper care and successful brewing, water kefir grains can grow and multiply.

As your grain quantity increases, you may choose to make larger batches, maintain your preferred amount, or share excess grains with others.

Growth rates naturally vary depending on brewing conditions.

TAKING A BREAK FROM BREWING

For short breaks, grains can generally be kept refrigerated in prepared sugar water in a covered container.

When you're ready to begin brewing again, return the grains to fresh sugar water and normal brewing conditions. They may require several batches to return to their previous level of activity.

For extended storage, contact us for guidance appropriate to the length of time you plan to stop brewing.

KEEP YOUR EQUIPMENT CLEAN

Use clean jars, strainers and utensils when handling your grains.

If your grains or brew develop an unusual foul odor, visible mold, or another obvious sign of contamination, do not consume the batch.
