Flavor Your Water Kefir
Once you've completed the first fermentation and removed your water kefir grains, you can enjoy your water kefir as-is or add fruits, juices, herbs and other flavors.
This additional flavoring stage is commonly called a second fermentation.
Important: Always remove your Florida Sun Kefir grains before adding fruits, juices or other flavorings unless a recipe specifically instructs otherwise.
BASIC SECOND FERMENTATION
- Complete your normal first fermentation.
- Strain and remove the water kefir grains.
- Transfer the finished water kefir to a clean bottle suitable for carbonated beverages.
- Add your desired flavoring.
- Leave some empty space at the top of the bottle.
- Close the bottle and allow the flavors to develop.
- Refrigerate when the desired flavor and carbonation have developed.
- Open carefully — pressure may have accumulated inside the bottle.
🍋 LEMON GINGER WATER KEFIR
Bright, refreshing and slightly spicy.
For approximately 4 cups of finished water kefir:
• 1–2 tablespoons fresh lemon juice
• 2–3 thin slices of fresh ginger
Add the lemon juice and ginger to your strained water kefir.
Allow the flavors to develop during the second fermentation, then refrigerate.
For a stronger ginger flavor, use additional ginger or allow it to infuse longer.
🍓 STRAWBERRY WATER KEFIR
Fresh strawberries add a naturally fruity flavor and beautiful color.
For approximately 4 cups of finished water kefir:
• 3–5 fresh strawberries, sliced
Add the sliced strawberries after removing your kefir grains.
Allow the strawberries to infuse during the second fermentation.
Strain the fruit if desired before serving and refrigerate.
🍍 PINEAPPLE WATER KEFIR
Pineapple pairs especially well with the light character of water kefir.
For approximately 4 cups of finished water kefir:
• ¼–½ cup fresh pineapple pieces
or
• A small amount of pineapple juice to taste
Add the pineapple after the first fermentation and after the kefir grains have been removed.
Allow the flavor to develop, then refrigerate.
🍊 ORANGE CITRUS WATER KEFIR
A simple citrus variation that's especially refreshing when served cold.
For approximately 4 cups of finished water kefir:
• ¼ cup orange juice
• Optional squeeze of fresh lemon or lime
Combine with your strained water kefir and allow the flavors to develop before refrigerating.
🫐 MIXED BERRY WATER KEFIR
Try your favorite combination of:
• Blueberries
• Raspberries
• Blackberries
• Strawberries
For approximately 4 cups of finished water kefir, start with about ¼ cup of berries and adjust future batches according to your taste.
Lightly crushing a few berries can produce a stronger flavor and color.
🍋🟩 LIME & GINGER WATER KEFIR
For a crisp variation:
• 1–2 tablespoons fresh lime juice
• 2–3 thin slices fresh ginger
Add to approximately 4 cups of finished water kefir after removing the grains.
Serve well chilled.
CREATE YOUR OWN FLAVORS
Once you're comfortable with the basic process, experiment with combinations such as:
Strawberry + Lemon
Pineapple + Ginger
Orange + Ginger
Mixed Berry + Lime
Lemon + Lime
Pineapple + Lime
Start with small amounts of flavoring. You can always adjust your next batch.
IMPORTANT — SECOND FERMENTATION & PRESSURE
Second fermentation can produce significant carbonation and bottle pressure.
Use bottles specifically designed to withstand carbonated beverages.
Never use a container that isn't designed to withstand pressure.
Do not overfill bottles. Keep bottles away from excessive heat and direct sunlight.
Always open carbonated water kefir carefully and slowly.
Refrigeration slows fermentation and helps control continued carbonation.
